Place all the ingredients except the apples and protein pudding in a bowl and mix to form a batter.
Peel the apples and cut into small pieces.
Add 3/4 of the apple pieces to the batter.
Pour the batter into a mold. Spread a thin layer of protein pudding on top.
Then spread the remaining apple pieces on top of the layer.
Tip: you can also add a pinch of oat flakes, cinnamon or nuts
Cover the cake with aluminum foil and bake for approx. 25 minutes at 185 degrees convection oven.
Remove the aluminum foil and bake for another 5-10 minutes.
