Chop the vegetables and fry in a pan until translucent.
Add the mince and fry for a further 3 minutes.
Add the tomato purée, tomatoes and vegetable stock and simmer for approx. 15-20 minutes together with the herbs and spices.
In the meantime, cook the spaghetti and serve everything together with a Parmesan alternative (e.g. yeast flakes).
