Preparation

    Heat the pan on a medium heat with a little oil.

    Beat the eggs in a bowl and season to taste.

    Pour the eggs into the pan, fry one side until nicely browned and then turn.

    Top half of the omelette with mozzarella, peppers and cheese and leave to stand with the lid on a lower heat.

    As soon as the cheese has melted, close the uncovered side and leave to stand until the liquid from the mozzarella has evaporated.

    In the meantime, make a cup of coffee or tea and enjoy the perfect treat.

    Carefully place the omelette on a plate and spread 60g of protein from the daily requirement with a clear conscience.
