Slice the cucumbers and carrots lengthwise into strips with a peeler, mix in a bowl and knead a little with your fingers - this loosens the texture a little.
In a bowl, mix the crème fraîche with the yogurt, then add the crushed garlic, lime juice, chili flakes, honey and dill.
Mix everything well, season with salt and pepper and add to the cucumbers. Leave to marinate for at least 15 minutes and up to 12 hours.
