First cut the carrots, cauliflower and potatoes into bite-sized pieces, slice the onion and chop the garlic.
Heat the oil in a large pan, fry the onion briefly and then add the remaining vegetables (except for the beans), sauté for approx. 7 mins.⠀
Now add the tinned tomatoes, bring to the boil, season generously with salt and pepper, then simmer for 10 minutes ⠀
Cook the pasta in plenty of boiling salted water according to the packet instructions, perhaps one minute less than stated so that it is still al dente in the minestrone.
Grate the parmesan, add to the soup with the parsley and serve
