Mix the water with the vegetable stock.
Place in a pan with the rice, chopped tomatoes, spinach and seasoning of your choice, mix together and bring briefly to the boil.
Turn the heat down, put the lid on and simmer for approx. 15-20 minutes.
n the meantime, cut the halloumi into thin slices, season to taste and fry in another pan until golden brown.
Serve the halloumi with the rice.
